Name: Sand Dune Select Oysters
Origin: Prince Edward Island, PE-5K
Size: Medium: 3″-3.5″
Flavour: Known for their unique bright green shell and dynamic flavour. Combines a salty vegetable taste with a lingering buttery finish.
Farming method: There are cultivated on the bottom of the bay almost like wild oysters would be. Where they are naturally overturned by the tide, which gives them deep cuts and thick shells. Hand-picked with a rake, the old-fashioned way.

Origin: Prince Edward Island, PE-5K
Size: Large: 3“+
Flavour: These oysters have a crisp salty flavour profile with a vegetal hint.
Farming method: top feeding on the cage.
Farmer: Phil, owner and founder of East Cape Oyster Co. named his first oysters after the town where they’re grown in, at the head of the Souris River. In the east end of PEI, Souris Bay water is always renewed by the tide.
