36 Blue Label Oysters from the Sweet Oyster Company in PEI that you can serve on ice and maybe even try a few gratined with summer tomatoes and garlic.
100 g of Sea Urchin Roe (Uni) from Rimouski, called by Captain Gaston "the foie gras of the sea". Plate it with some nice toasted baguette croutons and butter.
To finish and impress your guests with something they have probably never had before, we have selected for you, 2 lbs (24-30 pcs) Abalone. They have a beautifully unique shell, that your guests will want to keep!
Remove the shell and clean the abalone, only keeping the muscle. Lightly sauté in a pan with some butter, salt, and pepper for two minutes on each side. Add some chopped tarragon or chives at the end and serve it warm on a little plate. You can even clean the shells to serve them in, show your guests the beauty of mother nature.
