Fresh frozen uncooked duck liver from Rougié to be pan seared or cooked to your liking.
Pull out from the freezer one hour to thaw before to cooking.
Season generously with salt and pepper and flour .
Heat pan until hot on high and sear for 2 minutes on each side.
Serve with nice fruit compote and brioche. (pears, cherry, apple, figue, prune)
