Blini recipe by OC

Blinis are small, thin pancakes used as an accompaniment to caviar and smoked fish, often garnished with crème fraîche.

The variations are endless by substituting different types of flours and/or vegetable purées.

Here is a great recipe that can be simple to make, but if you don’t have the time we carry an imported french variety!

Material:

  • 2 bowls, whisk, plastic spatula, measuring cup, crepe pan

Ingredients:

  • 1 T flour
  • 1/4 T buckwheat flour
  • 1 tsp instant yeast
  • 1 pinch of salt
  • 1 T of lukewarm milk
  • 2 egg yolks
  • 2 egg whites
  • Butter for cooking

*Preparation:

  • Mix all the dry ingredients and add the egg yolks and lukewarm milk.
  • Cover and let the mixture sit at room temperature for about an hour.
  • Beat the egg whites until stiff and gently incorporate them into the dough.
  • Cook in a buttered crepe pan for about twenty seconds on each side.
