Blinis are small, thin pancakes used as an accompaniment to caviar and smoked fish, often garnished with crème fraîche.
The variations are endless by substituting different types of flours and/or vegetable purées.
Here is a great recipe that can be simple to make, but if you don’t have the time we carry an imported french variety!
Material:
- 2 bowls, whisk, plastic spatula, measuring cup, crepe pan
Ingredients:
- 1 T flour
- 1/4 T buckwheat flour
- 1 tsp instant yeast
- 1 pinch of salt
- 1 T of lukewarm milk
- 2 egg yolks
- 2 egg whites
- Butter for cooking
- Mix all the dry ingredients and add the egg yolks and lukewarm milk.
- Cover and let the mixture sit at room temperature for about an hour.
- Beat the egg whites until stiff and gently incorporate them into the dough.
- Cook in a buttered crepe pan for about twenty seconds on each side.
