THE SECRET OF THE JOSÉPHINE
The Joséphine owe its characteristics to its unusual production method. Its secret : the self-turning bags, patience, tenacity, a lot of optimism and above all an exceptional terroir.
THE METHOD
The method is simple and respectful of the rhythms imposed by the ocean Like rows of vines at the edge of the Atlantic, oyster bags with floats swing to the rhythms of the tides.
With this system, the nature reproduces an essential gesture in oyster farming called. “le virage” or turning in English. Without this work the growth of the shell, called “la pousse”, would develop to the detriment of the taste quality. Also,the seaweed would adhere to the mesh depriving the oysters of their daily needs.
THE TIMES
A few weeks old, the oyster is placed in an oyster bag and positioned on the trestle. We come regularly to turn the bags and follow the growth. After 18 months the oyster reaches about 50-70 gr. It will continue to develop inside a self-turning bag attached to the line-ups. Thus, the shells roll according to the pace and the intensity of the elements.
