The month of October is for you as well as for us the occasion to dive into oysters. As our name is Oysters & Caviar, we have to lead by example and introduce you to a variety of products.   So we continue our "Oyster of the Month" series. After the Gowanbrae, here are the Eastern Gales from Enman Oyster Company.

As oyster specialists, we want to share with you, products that we particularly like and to help you discover different flavour profiles. From salty to more vegetal, from Maritime to Western Canadian, you'll find all kinds.

The Eastern Gales from the Enman Oyster Company. 

These oysters are the baby of head oysterman Charles Enman. He grows his batch on Murray Harbour in Prince Edward Island.

 A premium bottom-farmed oyster, known for its unique bright green shell and vibrant flavour. Combines a salty vegetable taste with a buttery finish.

They are cultivated at the bottom of the bay in much the same way as wild oysters would be. Here they are naturally turned over by the tide, giving them deep cuts and thick shells. They are hand-picked with a rake, the old-fashioned way.

Who is the Enman Oyster Company?

Created in 2020 by the islander Charles Enman, the young company produces the Eastern Gale: a bottom cultured, premium oyster grown in Murray Harbour, Prince Edward Island. You will find a green hue, deep cup and a salty taste of the island’s Eastern waters.
