How do you ship your orders?
Once your order is confirmed, it is prepared in our warehouse. You will receive a confirmation email with the details of your order. We offer the following shipping and pickup methods:
Express Delivery: 1 to 2 business days (subject to availability and delivery location).
Free Pickup: Available for online orders picked up at our store located at 7264 Rue Cordner, Montréal QC.
Shipping costs vary depending on the chosen method and destination. You can see the exact costs at the checkout. Delivery times may vary based on your location. For remote areas or international destinations, the delivery time may be longer.

Where do you ship?
We ship across Canada. We also offer local pickup from our store in Montréal, located at 7264 Rue Cordner, Montréal QC.
Unfortunately, at this time we do not ship to the United States.
How do I track my order?
Once your order is shipped, you will receive an email with a tracking number. You can track the progress of your delivery in real time via the link provided in this email.
What are your shipping fees?
Caviar-Only Orders:
- Free Shipping: Available for caviar-only orders over $139 throughout Canada.
All Other Orders:
- Greater Montreal Area: Free shipping on orders over $139.
- Rest of Quebec: $15 shipping fee.
- Ontario: $30 shipping fee.
- Alberta, Manitoba, New Brunswick, Newfoundland and Labrador, Nova Scotia, Prince Edward Island, Saskatchewan, and Yukon: $45 shipping fee.
- British Columbia: $50 shipping fee.
- Nunavut and Northwest Territories: $65 shipping fee.
What days do you ship orders?
To ensure the freshness and quality of your oysters and caviar, we have specific procedures for orders shipped outside of our local delivery area.
- Orders Placed Before 12:00 PM: Orders placed before noon will be prepared and shipped the same day, Monday through Thursday.
- Orders Placed After 12:00 PM: Orders placed after noon will be prepared and shipped the next business day, Monday through Thursday.
Orders destined for outside our local area are shipped only Monday through Thursday. This ensures that fresh products, requiring temperature control, do not spend the weekend in transit. We offer express delivery to ensure product freshness, guaranteeing receipt within 1 to 2 business days.

When will I receive my order?
We ship via Express Delivery, with orders typically arriving within 1-2 business days. Delivery times may vary due to holidays, extreme weather conditions, or other unforeseen factors.
Occasionally, delays may occur if fresh products are not immediately available. If this happens, we may need to substitute items, but we will always communicate with you to keep you informed and ensure your satisfaction.

How are your products packaged for delivery to ensure freshness?
Our oysters and caviar are packaged with insulating materials and ice packs to maintain a consistent temperature during transport.
I received a damaged product or had problems with delivery. What should I do?

Product Storage
How long can the products be kept before consumption?
To ensure the best quality and safety of your oysters and caviar, please follow these storage instructions:
Oysters:
- Storage: Once you receive your order, place the oysters immediately in the refrigerator.
- Shelf Life: Oysters can be kept in the refrigerator for about 10 days after the harvest date. The harvest date is clearly indicated on the packaging. Be sure to check this date to ensure their optimal freshness.
Caviar:
- Storage: Place the caviar in the refrigerator upon receipt of your order.
- Shelf Life: Caviar generally has a shelf life of about 40 days from the production date. Check the expiration date on the packaging and consume the caviar before this date to ensure its quality.
Additional Tips:

- Consume oysters and caviar immediately after opening for an optimal experience.
Can I open my oysters and eat them later?
Once oysters are opened, it is recommended to consume them within 30 minutes of opening to ensure their freshness and food safety while maintaining their taste and texture.
If you need to prepare oysters in advance for your guests, it is possible to open them before their arrival. In this case, place the opened oysters on a platter and keep them in the refrigerator at a temperature below 4°C (40°F) until serving. Cover them lightly to prevent them from drying out. Oysters should not be left at room temperature for more than 2 hours.
Before consuming opened oysters, ensure they have a fresh and pleasant odour. If you notice any signs of deterioration or an unpleasant smell, it is best not to consume them.
Can I open my caviar and eat it later?
Once caviar has been opened, it is important to follow some precautions to ensure its freshness and quality. After opening, caviar should be well-sealed and kept in the refrigerator. Ensure the lid is airtight to avoid contact with air, which can affect the quality of the caviar.
Opened caviar generally remains consumable for 3 to 5 days when properly refrigerated at an ideal temperature of around -2 to -1°C (28 to 30°F). To ensure proper storage in household refrigerators, store your caviar on the bottom shelf at the back of your fridge.
Store your caviar in its original packaging or in an appropriate airtight container. Avoid transferring caviar to unsuitable containers. Use clean, dry utensils to serve the caviar to prevent contamination and drying.

To ensure the best quality and safety of your oysters and caviar, here are the refrigerator storage recommendations:
Oysters:
- Shelf Life: Oysters can be kept in the refrigerator for about 15 days* after the harvest date, which is indicated on the packaging. Please check this date to ensure their optimal freshness.
- Storage Method: Do not place oysters in an airtight container, as they need to breathe. Store them in a bowl or tray and cover them with a damp cloth to maintain an adequate level of humidity. Keep your oysters in the refrigerator at a temperature below 4°C (40°F).

- Shelf Life: Caviar can be stored in the refrigerator for up to 40 days minimum from the production date, as indicated on the packaging. Be sure to respect this date to ensure product quality.
Storage Method: Opened caviar generally lasts 3 to 5 days in the fridge. Keep caviar in its original packaging or in an appropriate airtight container to avoid contact with air, which could alter its quality. How do I open a caviar tin?
1. Cut the paper side seals
2. Place a caviar tin opener or a coin between the top and bottom part of the tin
3. Rotate the opener until you hear the tin pop open
What spoon should I use to serve caviar?
To serve caviar, it is recommended to use a mother-of-pearl spoon rather than a metal spoon. This is because metal spoons can react with the caviar, leading to oxidation and altering the delicate taste of the product. Contact with metal can also change the texture and quality of the caviar.
Mother-of-pearl or wooden spoons are ideal for serving caviar. These materials are neutral and won’t affect the caviar’s taste, allowing for an optimal tasting experience.
What should I serve with oysters?
Fresh oysters are delicious on their own, but you can enhance their enjoyment with various accompaniments:
- Raw: Fresh oysters are always a refined option. To fully appreciate their textures and aromas, eat them directly after opening. This allows their pure and delicate taste to shine.
- Mignonette: A mignonette is a traditional sauce for oysters, usually made from vinegar (often white wine or champagne vinegar), finely chopped shallots, and sometimes pepper. Prepare a homemade mignonette with quality vinegar to surprise and delight your guests.
- Lemon: A simple lemon wedge can be squeezed over the oysters to add a touch of acidity and freshness.
- Hot Sauces: Various hot sauces can also complement the oysters.
Oysters can also be grilled, which is a delicious and surprising option, especially for newcomers. They can be served with flavoured butter or spices to enhance their taste.

What should I serve with caviar?
Caviar is a delicate treat that can be enhanced with various accompaniments and beverages, as a topping, or enjoyed alone. If this is your first time enjoying caviar, we recommend enjoying it alone through a caviar bump. Here are some suggestions for an optimal tasting experience:

- Oysters: For a delicious combination of marine flavours, you can add caviar to an open oyster.
- Buttered Toast: Buttered toast points are also an excellent choice for serving caviar, providing a crunchy texture and pleasant contrast.

What should I drink with caviar?
When it comes to caviar, there are several drink options which enhance and complement its flavour.
- Champagne is an excellent choice to accompany caviar. Its bubbles and acidity perfectly complement the flavors of caviar.
- Sancerre white, with its freshness and acidity, also pairs well with caviar. Other dry white wines are also suitable for enjoying with caviar. Be sure to serve your wine chilled.
- A quality vodka is another classic option. Served very cold, it accompanies caviar with elegance.
We recommend against pairing your caviar with red wine, as the high tannins can overpower the delicate flavours of caviar.
What is a caviar bump?
The ideal way to savour the fine flavours of caviar on their own is by enjoying a caviar bump (“à la royale” in French). Simply spoon a dollop of caviar onto the back of your hand with a mother-of-pearl spoon and consume the caviar in one mouthful. The warmth of your hand will warm the caviar and bring out its flavour.
