Handcrafted by Jason Woodside, a 2x Canadian Oyster Shucking Champion from Prince Edward Island, the IslanderPro is the knife he reaches for when the stakes are high. Every detail, from the pro-grade blade geometry to the hand-turned handle, is built around one goal: getting shells open faster, cleaner, and with less effort.

The ProSharp blade is made from 306 high-carbon stainless steel with a medium flex that gives you feel and precision at the hinge. It comes shaped and sharpened, ready to work.

The handle is where the IslanderPro earns its name. Each one is turned and finished by hand from a single piece of hardwood, chosen for how it feels in your grip after the 50th shell. Five woods are available, each with its own weight, texture, and character.

Choose your wood

Red Cedar - PEI (Light)

The choice for speed. Cedar is one of the lightest hardwoods available, making it the preferred handle for high-volume and competitive shuckers who need to move fast.

Black Walnut - PEI (Medium)

A balanced all-rounder. Rich, dark grain with enough weight to stay stable and enough give to stay comfortable through long sessions.

Yellow Birch - PEI (Heavy)

Dense, rugged, and grippy when wet. Birch holds up in the conditions you actually work in.

Wenge - Africa (Medium-Heavy)

A striking dark wood with a tight, interlocked grain and a naturally smooth finish. Wenge brings an exotic character to a tool built for serious work.

Leopardwood - South America (Medium-Heavy)

One of the most distinctive handles in the lineup. Leopardwood's bold, flecked pattern makes every knife visually unique, with the weight and density to match.
