Phil Enserink is the owner and founder of East Cape Oyster Co. He named its oysters after the place where they’re grown, at the head of Souris River, at the east end of the Island. Souris Bay water is always renewed by the tide. Enjoy these small and meaty oysters fresh on ice with slices of lemon.

Shipping/delivery/pickup

  • Orders placed before 1 PM ET Monday through Thursday can ship the same day, subject to product availability
  • Delivery options and estimated transit depend on the address and are shown at checkout

Storage

  • Refrigerate oysters promptly at 4°C or below
  • Keep them on the lowest shelf under a damp cloth
  • Keep the oysters cup-side down so they retain their natural liquor
  • Before serving, discard any oyster with a shell that remains open when tapped

Serving recommendations

Serve oysters freshly shucked with lemon or a simple mignonette. Keep the garnishes light so the differences in salinity, texture, and finish stay easy to notice.

How many oysters should I order?
For two, start with 12 oysters. For four, plan on 24. For a larger table, plan on 48.
