Phil Enserink is the owner and founder of East Cape Oyster Co. He named its oysters after the place where they’re grown, at the head of Souris River, at the east end of the Island. Souris Bay water is always renewed by the tide. Enjoy these small and meaty oysters fresh on ice with slices of lemon.
