Thunnus Alalunga is the finest tuna species used in canning, distinguished by its tender, juicy flesh. But it is during its migration along the Northern coast of Spain that it reaches its peak fat content, intensifying both texture and flavor. That is when we catch it in the traditional way, pole-and-line, one by one. And only then does it become Bonito del Norte.
