Legris fine de Claire oysters are grown by Maison Legris in the Lilia Archipelago, Brittany, where the Aber Wrac’h meets the Atlantic. Their briny, mineral flavour carries gentle vegetal and chestnut notes. Patient tending over more than three years produces a deep, sturdy shell.

Fine de Claire is an oysters with less meat than the special with 11% or less. Fine de Claire oysters are rich in minerals and iodine. The perfect oysters for the Ocean lovers.

Storage

  • Refrigerate oysters promptly at 4°C or below
  • Keep them on the lowest shelf under a damp cloth
  • Keep the oysters cup-side down so they retain their natural liquor
  • Before serving, discard any oyster with a shell that remains open when tapped

Serving recommendations

Serve oysters freshly shucked with lemon or a simple mignonette. Keep the garnishes light so the differences in salinity, texture, and finish stay easy to notice.
