NAKR is Maison Legris’ special oyster from Lilia, Brittany. Suspended in tidal currents using the grower’s patented system, it develops dense, crisp flesh. Briny and vegetal notes give way to a gentle sweetness reminiscent of scallops.

What Special oyster means?:  to be described of a special oysters you have to follow the rules of providing a yield of minimum 11%. Legris offer a Special with a yield of 16% what mean a meaty oyster.

Storage

  • Refrigerate oysters promptly at 4°C or below
  • Keep them on the lowest shelf under a damp cloth
  • Keep the oysters cup-side down so they retain their natural liquor
  • Before serving, discard any oyster with a shell that remains open when tapped

Serving recommendations

Serve oysters freshly shucked with lemon or a simple mignonette. Keep the garnishes light so the differences in salinity, texture, and finish stay easy to notice.

For two, start with 12 oysters. For four, plan on 24. For a larger table, plan on 48.
