These oysters are cultivated on the bottom of the bay almost like wild oysters would be. This is where they are naturally overturned by the tide, which gives them deep cuts and thick shells. Hand-picked with a rake, the old-fashioned way. Known for their unique bright green shell and dynamic flavour, you will notice a combination of a salty vegetal taste with a buttery finish that lingers on the palate.

Storage

  • Keep the oysters cup-side down so they retain their natural liquor
