Our Wild Choice Oysters, harvested on Prince Edward Island, on the East Coast near Souris.

Traditional Harvesting: The oysters are raked by about forty independent harvesters using small boats called PEI Oyster Dories, continuing a 150-year-old tradition.

  • Natural Growth: These wild oysters grow on the bottom of the bay.
  • Flavor Profile: They are distinguished by their deep, irregular green shells. Their flesh is plump with opaque membranes, offering a perfect balance of iodine and minerals.

Storage
